We think salmon is a pretty work-horse fish, and it really fills you up; it's like the beef of fish. Rich and supple, biting into fresh salmon is like biting into a down pillow. Fine, bad analogy, but you get it. Also, salmon is chock full of omega vitamins, so that's a major plus too.
And if you want to do something other than a simple pan-sear, you could do this instead, and there you've got yourself a feast.
